How it works:
It simply creates a scrambled set of HTML code you cut/paste into your site.
Why it works:
Spammers send spiders out searching sites for any html code that reads “mailto:youremail@yoursite.com” which indicates a live email exists.   The spiders bring back the email and voila – your email is now on spammers lists (and yes spammers sell other spammers valid email addresses).
